Hash Brown Casserole


32oz Frozen Southern Style Hash Browns
1 can Cream of Chicken soup
1 can Cream of Mushroom soup
1 cup sour cream
1/2 cup butter melted
1 1/2 cups shredded cheddar cheese
2 cups sliced smoked sausage
diced peppers of choice
Combine all ingredients and place in a 9x13 pan that has been sprayed with non-stick cooking oil. Bake @ 350* for 40-45 minutes.
**** for 2-3 people, freeze 1/2 of casserole for 2 meals****
Serve with a salad, toast, and sweet tea....... good to go!!

Cheese Cake


Crust: 1 3/4 cups graham cracker crumbs
1/2 cup chopped pecans
1/2 tsp cinnamon
1/2 cup melted butter
1/4 cup sugar
Mix and press in bottom and sides of buttered spring pan.
Filling: 3 (8ozs) cream cheese softened
1 1/2 cups sugar
1/4 tsp salt
5 eggs
2 tsp vanilla
1 cup whipping cream, whipped
Add sugar, salt, and eggs to softened cream cheese. beat at medium speed. Add whipped cream and vanilla just until well blended. Pour into pan. Bake in preheated oven 450* for 15 minutes then turn oven down to 225* for 1 hour, then turn oven off and let set 15 more minutes. Remove from oven and let cool then refrigerate 8 hours. Top with choice of fruit filling.
For Coconut filling, Combine 1/4 cup cream of Coconut and 1 1/2 cups toasted flaked coconut. You can toast the coconut flakes in the microwave for 15 seconds.

Toasted Oats Choco-Peanut Butter Bars!!!!


The best granola bars I have ever tasted!!! A must try!
Ingredients:
2 cups oats
1 cup shredded sweetened coconut
1 cup chopped pecans
1/2 cup peanut butter
1/2 cup nutella chocolate
1/2 cup honey
1/2 tsp salt
2 Tbsp chia seeds ( optional)
1 Tbsp vanilla extract
1 heaping Tbsp coconut oil
1/2 cup mini chocolate chips or mini M&Ms
1/2 cup white chocolate chips, melted (optional)
Preheat oven to 350 F.
Mic oats, coconut and nuts. Spread in a large cookie sheet and toast 10 minutes in oven. Stir every 3 minutes. Let cool.
Mix nutella, honey, peanut butter, salt and vanilla. Place in a microwavable bowl and heat till melted. Stir until smooth and add coconut oil.
Place cooled oat mixture in a mixing bowl. Add chia seeds and peanut butter mixture. Mix well. Stir in chocolate.
Press in a 8by8 parchment paper covered pan. Cool in the fridge for 2-3 hours. Cut in 12 bars and top with melted chocolate if desired.
Store in an air tight container. Enjoy

Chocolate Peanut Butter Pizza


Pizza dough ( 9" diameter )
1/2 c sour cream
2 c powdered sugar
3/4 c peanut butter
1 T honey
2 c chocolate chips ( semi-sweet )
Prepare your skillet or baking pan. using non stick cooking spray.
Roll pizza dough out to about 10 inches. Fold 1 inch of the edge down to form the crust edge. Mix sour cream and powdered sugar using a whisk until smooth. Pour onto pizza dough. Sprinkle 1 cup of chocolate chips on the sour cream sugar sauce. Add honey to the peanut butter and microwave for 1 minute, stirring at the 30 second mark. Spread peanut butter honey mixture on top of the chocolate chips and add the rest of the chocolate chips on top of the peanut butter. Bake in a pre heated 375* oven for 20 minutes or until crust is lightly golden brown. Let cool and sprinkle with powdered sugar.

Very interesting indeed! Water or Coke? We all know that water is important but I’ve never seen it written down like this before.

WATER

And now for the properties of COKE

1. In many states (in the USA) the highway patrol carries two gallons of Coke in the truck to remove blood from the highway after a car accident.

2. You can put a T-bone steak in a bowl of coke and it will be gone in two days.

3. To clean a toilet: Pour a can of Coca-Cola into the toilet bowl and let the “real thing” sit for one hour, then flush clean. The citric acid in Coke removes stains from vitreous china.

4. To remove rust spots from chrome car bumpers: Rub the bumper with a rumpled-up piece of aluminum foil dipped in Coca-Cola.

1. The active ingredient in Coke is phosphoric acid. Its pH is 2.8. It will dissolve a nail in about 4 days. Phosphoric acid also leaches calcium from bones and is a major contributor to the rising increase in osteoporosis.

2. To carry Coca-Cola syrup (the concentrate) the commercial truck must use the Hazardous material place cards reserved for Highly corrosive materials.

3. The distributors of coke have been using it to clean the engines of their trucks for about 20 years!

Turkey Lettuce Wraps


Filling:
12 oz. Ground Turkey
2 tsp veg oil
8 oz white mushrooms, chopped
3 green onions, sliced
2 cloves garlic, minced
one 6 oz can water chestnuts, chopped
1/4 cup low sodium soy sauce
1 tbsp brown sugar
1 tbsp rice vinegar
Drizzling sauce:
3 tbsp low sodium soy sauce
2 tbsp rice vinegar
1 tbsp honey
1 tbsp Dijon/spicy mustard
1 tbsp siracha hot sauce
1/2 tsp sesame oil
8-12 large iceberg lettuce leaves (I used butter lettuce)
Shredded carrots for serving
Bean sprouts for serving
Chopped cilantro for serving
Directions:
For filling: brown turkey in oil in large Saute pan, until no longer pink. (I added some seasoning to meat to my liking, garlic powder, pepper,onion powder) add mushrooms, green onions, garlic, water chestnuts, cook until mushrooms soften. In small bowl, mix soy sauce, brown sugar, vinegar pour over Turkey mixture and cook 1 min.remove from heat.
For drizzling sauce: whisk together all ingredients and 1/4 cup water.
Serve on lettuce leaves, drizzle with sauce and vegetables for serving!

Arroz Con Pollo (light)


2 boneless skinless chicken breasts
1/2 teaspoon cumin
1/4 tsp cayenne
1/2 tsp turneric
1 tsp garlic powder
1 yellow onion diced
1 bell pepper diced
2 cloves garlic minced
5-6 strips of roasted red pepper
1 cup peas (frozen thawed)
2 tomatoes chopped
1 cup white rice
preheat oven to 375 , mix all spices in a small bowl and set aside half . With half the spices , rub into the chicken thouroughly and let it set at least 10 minutes .
Add 1 tablespoon of olive oil to a large oven proof pan , when the oil is shimmering add the chicken and cook on both sides , about 3 minutes on each side . Once browned remove from pan and set on a foil lined baking sheet. and put in oven to finish cooking (20 minutes )
In the mean time , with the drippings in the pan add anpother teaspoon olive oil and when it is hot add your onion , bell pepper , and garlic . Saute' until the onion is soft about 5 minutes , add the remaining spice mixture and white rice to the pan , stir to coat the rice and add 2 cups of water . Increase heat to high and bring to a boil. Once the water is boiling , cover and put pan in the oven 17 minutes. Remove from oven and fluff rice with a fork , Slice chicken on the bias and set aside , add tomators , peppers , and peas to the rice and stir in to warm through , add salt and pepper to taste . Nestle in the chicken and serve in the pan , family style .
serves 3-4 hungry people
