FAMOUS Oopsie Rolls

Preheat oven to 300' F and follow instructions below.
Ingredients:
3 eggs
1 packet of stevia
1 Tbsp golden flax meal
1 dash of salt
4 oz.of Philadelphia cream cheese
1/3 tsp xanthan gum
Separate the eggs and add cream cheese to the yolks. Use a mixer to combine the ingredients together. In a separate bowl, whip egg whites and xanthan gum until stiff (if you’re using the same mixer, mix the whites first and then the yolk mixture).
Using a spatula, gradually fold the egg yolk mixture into the white mixture, being careful not to break down the whites. Spray a cookie sheet with non-stick spray and spoon the mixture onto the sheet, making 6 mounds. Flatten each mound slightly.
Bake about 30 minutes (You want them slightly softer, not crumbly). Let cool on the sheet for a few minutes, and then remove to a rack and allow them to cool. Store in a loosely open sack and allow to rest on the counter before use (otherwise they might be too moist). Can be frozen.
Notes: If you are making these to be savory (for burgers) you can add dry mustard and dill or other seasonings to the yolk mixture. If you want a more sweet roll, add a very small amount of stevia natural sweetener to the yolk mixture.

CINNAMON ROLL BISCUITS

These are so easy to make, with no yeast in the dough!! Love these!!!!

INGREDIENTS:
For the Biscuits:
2 cups all-purpose flour
2 teaspoons sugar
2 teaspoons baking powder
½ teaspoon salt
1¼ cups heavy cream

For the Filling:
2 tablespoon butter, melted
1/2 cup brown sugar
2 teaspoons ground cinnamon

DIRECTIONS:
1. Preheat oven to 425 degrees F.

2. In a medium bowl, mix the flour, sugar, baking powder and salt. Add the cream and stir until a rough dough comes together. Remove the dough from the bowl and place on a lightly-floured surface. Knead the dough until smooth, About 40 seconds. If the dough seems dry, add more cream 1 tablespoon at a time.

3. Roll the dough into a 9x12-inch rectangle. Brush the dough with the melted butter. Stir together the brown sugar and cinnamon in a bowl, then sprinkle evenly over the surface of the dough. Starting at one of the long sides, roll the dough into a cylinder. Cut the cylinder into equal pieces. Press down on one side of each piece to flatten slightly, then transfer to a cookie sheet lined with parchment paper. Repeat with all the pieces.

4. Bake for 12 minutes, or until the biscuits are golden brown. Remove from the oven and transfer to a wire rack to cool slightly. Enjoy

Strawberry Dessert

2 Betty Crocker Sugar cookie mixes...
16 ounces softened cream cheese
2 cups sugar
1 to 2 cups whipped cream or cool whip
2 or 3 lbs. strawberries washed and sliced
Strawberry glaze - you can buy it in jars, box mixes or make it using cornstarch
Whipped Cream for topping
Preheat oven to 375.
Prepare the cookie mixes with the butter and egg as the directions on the bags say to. Spread in a Texas sheet cake pan (like 10x15 I think) to make the crust. Bake at 375 for about 15 minutes or until golden brown.
Mix softened cream cheese and sugar with hand mixer until well blended. Then fold in the whipped cream or cool whip. When cookie crust is done and slightly cooled spread the cream cheese mixture over the crust.
Then mix strawberries with glaze of your choice (or even just mix strawberries with sugar and let sit overnight in fridge and they would work) and pour the mixture over the top and chill for about four hours or more.
Serve with whipped cream on top!
Enjoy!

Avocado Fries

Ingredients
Canola oil for frying
1/4 cup Flax Meal
1/4 cup oatmeal
About 1/4 tsp. kosher salt
2 large eggs, beaten to blend
1 1/4 cups Italian Bread Crumbs
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges
Preparation
1. Preheat oven to 200°. In a medium saucepan, heat 1 1/2 in. oil until it registers 375° on a deep-fry thermometer.
2. Meanwhile, mix flax meal with oatmeal 1/4 tsp. salt in a shallow plate. Put eggs and Bread crumbs in separate shallow plates. Dip avocado in flax meal, shaking off excess. Dip in egg, then Bread crumbs to coat. Set on 2 plates in a single layer.
3. Fry a quarter of avocado slices at a time until deep golden, 30 to 60 seconds. Transfer slices to a plate lined with paper towels. Keep warm in oven while cooking remaining avocados. Sprinkle with salt to taste.
You can use Panko instead of Italian bread crumbs.
