Oatmeal Cake with Coconut Frosting



1/2 cup quick cooking rolled oats
3/4 cup boiling water
1/4 cup unsalted butter
1/4 cup granulated Swerve or Stevia
1/2 cup lightly packed brown sugar
1 egg
2/3 cup almond flour
1/2 tsp baking soda

Mix oatmeal and boiling water together then cover it.
Beat butter and sugars together until well combined. Add egg and beat again.
Sift together flour and baking soda then stir into the butter mixture.
Fold in the oatmeal mixture.

Heat oven to 350F, grease and flour a 9x9"-inch pan. Pour in the batter and bake for 25 minutes or until toothpick tests clean. Remove from oven and cover with a clean tea towel to keep warm.

Coconut Frosting

3 Tbsp melted unsalted butter
1/3 cup brown sugar
1/2 cup sweetened shredded coconut
1/2 cup chopped nuts of your choice (or omit)
2 Tbsp almond milk (or regular milk)
1/2 tsp vanilla extract

Combine all and mix thoroughly. Gently spread over top of warm cake.
Pop back into the oven and broil until coconut is just lightly browned. Watch close - don't burn!! Cool, slice and serve!!
