☆ Vegetable and Chicken Lo Mein ☆
Ingredients ~
• 8 ounces angel hair pasta
• 8 ounces chicken breasts cut into thin strips
• 1/2 tsp crushed red pepper
• 2 garlic cloves, minced
• 4 tsps dark sesame oil (divided)
• 3 Cups Bok Choy
• 3/4 Cup chicken broth
• 2 Tbls Soy Sauce
• 1 Tbls Oyster Sauce
• 1/2 Cup Carrot (shredded)
• 1/3 Cup green onions sliced
• 2 tsp sesame seeds, toasted
Directions ~
1. Cook pasta according to directions, drain and set aside. (My angel hair pasta took 5 minutes)
2. Combine chicken, red pepper and garlic, tossing well to coat chicken. Spray wok or large pan with cooking spray. Drizzle 2 teaspoons of sesame oil all around wok/pan. Heat medium/high (375°) until hot. Add chicken mixture, stir fry 2 minutes. Add bok choy, stir fry additional 2 minutes. Add broth, soy sauce, and oyster sauce, stir fry addition 1 minute. Add carrot and green onions and stir fry for 1 more minute.
3. Add cooked pasta and remaining 2 teaspoons of sesame oil to wok/pan, tossing in gently and heat thoroughly with chicken mixture.
4. Sprinkle sesame seeds on top. I like to put a little more carrot and onion on top for garnish also.
Makes 4 (1 1/4 Cup servings) *
