3 large russet potatoes
1 1/2 T. olive oil
1 T. Cajun seasoning (recipe below)
good pinch of salt

Wash and dry the potatoes, leaving the skin on, slice into even strips (I used a mandolin for mine). Place the potatoes in a bowl and cover with cold water, allow to sit for 10 minutes. Drain the potatoes and pat dry. Add 1 T. olive oil, Cajun seasoning and the salt to the potatoes. Toss to coat well. Grease the bottom of a large baking sheet with the remaining olive oil. Sprinkle just a little more Cajun seasoning over the bottom of the baking sheet. Place the potatoes on the baking pan in a single layer. Cover with tinfoil and bake in a 450 degree oven for 10 minutes, remove the tinfoil and continue to bake for an additional 15 minutes, stirring about 1/2 way through the cooking time.
Cajun Seasoning
2 1/2 T. smoked paprika
2 T. garlic powder
2 T. salt
1 T. cayenne pepper
1 T. black pepper
1 T. onion powder
1 T. thyme
1 T. oregano

Combine all the spices and store in an airtight container.
