2 large russet potatoes
1 1/2 C. frozen broccoli florets
2 T. unsalted butter
1 T. milk
good pinch each salt and pepper
1/2 C. shredded cheddar cheese

Wash the potatoes...you can bake them at 425 degrees for 1 hour, or (as I did) use a fork and poke a few holes in them and put in the microwave for 5-6 minutes.
Remove and let cool enough to handle. Meanwhile, put the broccoli in a microwave safe bowl and cook for 2-3 minutes, or until tender.
Slice the potatoes in half lengthwise and carefully scoop out the potato into a bowl.
dd the butter, milk, salt and pepper and mash with a fork.
Once well combined, divide the filling among the 4 potato halves.
Top each potato with some of the broccoli and the sprinkle each one with cheese.
Place on a baking sheet and place in a 350 degree oven for 5-7 minutes or until cheese has melted.
