Michelle's Veggie Casserole



Ingredients:...
1 head of Cauliflower
2 or 3 Broccoli trees
1 large onion
2 cups sliced mushrooms or buy a container already sliced
1 pkg of fat free cream cheese
2 cans of low sodium cream of mushroom soup
1/2 cup of bread crumbs
butter or oil

Directions:
Preheat Oven to 350

- Chop up Cauliflower, and Broccoli and put into large pot and bring to a boil for 5 minutes
- Drain and put onto the bottom of a 9x12 baking dish

In a large frying pan add:
- Chop and saute onions, add chopped mushrooms saute for about 7 minutes.
- Add 2 cans of mushroom soup
- Add pkg of cream cheese
- Stir occasionally until cream cheese has melted and is mixed thorough

Add mixture over top of the Broccoli & Cauliflower, spread as even as you can

In a Small Frying Pan add:
- melt some butter, enough to coat the bread crumbs
- add 1/2 cup of bread crumbs
- Remove from heat

Add Bread Crumbs to top of entire dish
Cover and Cook for 30min at 350
