Ham & Bean Soup.
Ingredients.
1 lb Great Northern Beans (Soak overnight in a pot of water then rinse before use)
1 lb Butter Beans (Soak overnight in a pot of water then rinse before use)
Leftover Ham or any store bought ham of your choosing. I used leftover Easter Ham
2 Boxes Beef Broth.
1 Stick Butter
1 Large Yellow Onion
2 Tablespoons Olive Oil or Bacon Grease (I used Bacon Grease)
Red Pepper Flakes
Fresh Ground Black Pepper
Instructions
Saute onion in Olive Oil or Bacon Grease until soft
Place ham chunks and red pepper flakes in with the onion and cook on high heat till warmed through. About 10 minutes. You may need to add a bit more Olive Oil or Bacon Grease.
Pour in both boxes of Beef Broth, add pepper and simmer for one hour
Add soaked beans ( Can use cans if you would prefer)
Add Stick of Butter
Cook till it reaches the consistency that you like. I simmer mine for about another hour.
