Ingredients:
In large bowl, CREAM together:
½ cup (1 stick) softened butter
1 ½ cups sugar
Then ADD:
2 eggs
½ cup sour cream* see*TIP below
2 tsp. vanilla
3 - small mashed-up bananas
Mix well
In separate bowl, SIFT together:
2 cups flour (bleached or unbleached)
1 1/2 tsp. baking soda
1 tsp. salt
ADD dry ingredients to banana mixture and mix well
POUR into greased 13 x 9 cookie sheet that has 1-inch sides. (Large bar pan (stone) from Pampered Chef works great for a double batch to take for a large gathering)
BAKE at 350*F. for 35 to 45 minutes – top should be golden brown, but not too brown – use toothpick inserted in middle of cake – if it comes out clean, cake is done.
Let cool completely.
Can sprinkle top with powdered sugar or use Buttercream or Cream Cheese frosting. Add a 1/2 c of mashed banana to your frosting and top with chopped or crushed walnuts...Or, use a dab of whipped topping as each piece is served
*TIP: If you don’t have sour cream on hand, stir 1 tsp. white vinegar into ½ cup milk – let sit 5 minutes. voila! sour milk! (can also use this as a replacement for buttermilk)
