Italian Zucchini Fritters!



2 small zucchini- sliced paper thin, or shredded in food processer
1 Cup of flour
2 eggs (beaten)
2 cloves of garlic minced
1/2 Cup of Parmesan Cheese
1/4 Cup of water
Salt,pepper,Italian seasoning (all to taste) salt again after fried
Oil deep enough in a pan to cover fritters

I usually double this recipe because they go so fast. However, I do not double the zucchini, but just add about 1/4 of a cup more

Mix in one bowl, flour, seasonings and Parmesan cheese
