Southern Pecan Pie (A healthier version)


Ingredients:
3 eggs
2/3 Cup of Raw Cane Sugar
1 Cup Wild Raw Honey
1/2 Cup Melted Butter
1 Cup Pecan Halves
1 9 inch Unbaked Pie Shell
Preheat Oven to 350
Beat eggs thoroughly with sugar,dash of salt,Raw wild honey
and melted butter.
Add Pecans
Pour into unbaked pie shell
Bake for 50 minutes or until knife inserted halfway between center comes out clean.
Cool and enjoy!

SAUSAGE, BISCUITS & GRAVY IN A PIE


Makes a YUMMY breakfast!!!!
Ingredients:
16 ounces of Ground sausage
1/2 cup onion, diced
4 potatoes, washed and diced, (really small pieces)
2/3 cup butter
2/3 cup flour
2/3 cup chicken or beef broth
2 1/2 cup milk or more
1/2 tsp. seasoning salt
Salt and Pepper to taste
16 of the large home-style buttermilk biscuits
(the pop and bake kind)
8 miniature pie tins
Preheat oven to 350
Instructions:
Wash, cut and dice potatoes first. Dice onions, then in a large skillet,
add sausage, crumble in to small pieces, add potatoes, and onion.
Cook on medium heat for about 15 to 20 minutes stirring so mixture
doesn't burn.
Meanwhile in a large saucepan, melt butter on medium heat,
and once melted add the flour and broth. Whisk together till
well blended. Slowly add in the milk, and continue to stir until
mixture thickens. Add more milk if too thick. Add seasoning
salt and salt and pepper to taste.
Add the sausage potato mixture to the gravy and stir well.
Set aside.
Roll the biscuits out, one at a time. Roll out one for bottom layer
a little bigger than the pie tin, and one that will go over the top.
After you roll out the biscuits, put it into the pie tin, fill it with the
gravy mixture, be careful not to get on edges. Top off with the
top biscuit and pinch edges together all around the top layer of
the pies. Do this with the rest of the biscuits.
If you don't have the pie tins, this will also work with a muffin tin.
Use one roll for the bottom of the tin, and half a roll for the top.
Bake for 15 minutes for the pies, and 13 for the muffin size.

Ice Cream In A Bag Less Than 10 minutes! A REFRESHING summer treat!



This is old I remember doing this back in school when I was little and when I do it with my kids they are amazed how fast it is lol ...

Here is what you will need to make homemade ice cream in a baggie:

2 Tablespoon stevia ( more or less depending on sweet tooth) can use sugar but save those calories!!!
1 cup half & half (or light cream)
1/2 tsp vanilla extract
1/2 cup coarse salt or table salt(I used canning salt)
ice
gallon-sized Ziploc bag
pint-sized Ziploc bag

Mix the stevia, half & half and vanilla extract together. Pour into a pint-sized Ziploc baggie. Make sure it seals tightly.

Now take the gallon-sized Ziploc bag and fill it up halfway with ice and pour the salt over the ice. Now place the cream filled bag into the ice filled bag and seal.

Make sure it is sealed tightly and start shaking. Shake for about 5 minutes (or 8 minutes if you use heavy cream.)

Open the gallon-sized bag and check to see if the ice cream is hard, if not keep shaking. Once the ice cream is finished, quickly run the closed pint-sized baggie under cold water to quickly clean the salt off the baggie.

Open the baggie and pop in a spoon.

***White Chicken Enchiladas***



8 flour tortillas
2 cups cooked, shredded chicken
2 cups shredded Monterey Jack cheese
3 Tbsp butter
3 Tbsp flour
2 cups chicken broth
1 cup sour cream
1 (4 oz) can diced green chilies

Preheat oven to 350 degrees.

Spray a 9x13 pan with cooking spray.
Mix chicken and 1 cup cheese.
Roll tortillas and place in pan seam side down.
In a sauce pan melt butter under low heat. Stir in flour and cook about 1 minute. Add broth and stir until smooth. Allow to thicken. Remove from heat and stir in sour cream and chilies.

Pour sauce over enchiladas and top with remaining cheese. Bake 20-25 minutes and then broil for a few minutes to brown the cheese.

Chicken Tortilla Soup


Even though this may look like a lot of ingredients, the prep time is less than 15 min. Total cook time is 30 minutes.
Ingredients
1 small white onion chopped
3 green onions chopped and separated...whites add to white onion, greens save for garnish
2 fat garlic cloves minced
1 cup cilantro
1 can black beans
1 cup frozen (non gmo) corn
1 can fire roasted diced tomatoes
2 teaspoon cumin
1 1/2 tablespoon chili powder
2 tablespoons lime juice
2 tablespoons oil for sautéing (I used coconut)
1/2 teaspoon sea salt pepper to taste
2 boxes low sodium chicken broth or 64 oz.
3 boneless, skinless chicken breasts
1 red bell pepper chopped
2 cups tortilla strips or chips
cheddar cheese, sour cream, hot sauce or cayenne for garnish
1) Heat oil in med/high pan
2)Add onion and peppers sauté for 5 minutes until soft
3) Add garlic sauté 1 minute longer stirring
4) add cumin, chili powder, s & p, beans, corn and tomato...stir
5) add chicken broth and lime juice... bring to a low simmer for 10 minutes
6) taste and add more cumin, chili powder, lime and or salt and pepper to your liking
7)add chicken breast and cook for 15 more minutes
8)remove chicken breast to a plate, allow to cool for handling
9)with a fork, shred chicken and add back to soup
10)ladle soup into bowls , stir in a tablespoon or two each of cilantro and green onion, chips and garnish on top with cheddar cheese, sour cream and hot sauce to your liking.

Creamy Onion Pork Chops

Everyone that makes this just loves it! Thought I would share it again!

Ingredients:
6-8 Center cut pork chops
Creole Seasoning ( I used Cajuns choice)
Salt and Pepper
3 tsp minced garlic
2 medium onions ( i use Vidalia)
2 Tbs butter or olive oil
2/3 cup evaporated milk
1 can Cream of celery soup mixed with 1/3 cup water
Directions:
Pre Heat oven to 350 Degrees
Season chops with Creole seasoning, Salt, and Pepper
Lightly brown chops in fry pan with 2 Tbs butter or Olive oil.
Transfer to oven safe pan and add onions to fry pan and cook until soft.
add garlic.
In separate bowl mix together soup and water mix with evaporated mil and stir well.
add mix to the fry pan with onions
pour over chops
Bake uncovered for 1 hour
May be served over rice, noodles, or potatoes. (optional)

Super Yummy 3 Ingredient Cobbler


Ingredients :
Two 12-oz bags frozen mixed berries
one box white cake mix (no pudding)
and also one can of diet 7-up or sierra mist (clear soda)
Method
First step to prepare this easy and delicious recipe is put frozen fruit in a 9x13 baking dish. And after all that you need to add dry cake mix over the top.Next you need to be sure to pour soda slowly over cake mix. ( DO NOT stir the cake mix and the pop - this will give you a 'crust').
Second step : Now after all that bake 350 between 45 to 50 minutes.
note : You can use frozen peaches if you don't have mixed berries.

Skinny Pumpkin Cream Cheese Bars


• 1 box angel food cake mix- the 1 step kind
• 1 15oz can Pumpkin
• 3/4 Cup water
• 1/2 teaspoon cinnamon
• 1 8oz pkg. reduced fat cream cheese
• -few tablespoons of water, to be mixed with cream cheese
Soften the cream cheese then add it to mixer & beat it with a couple of tablespoons of water until smooth to thin it out.
In a separate bowl, mix the cake mix, pumpkin, water, & cinnamon together until it is smooth & well mixed.
In a 9x13 cooking dish- sprayed with non-stick cooking spray- add HALF of the cake –pumpkin mix. Then smooth it out with a rubber spatula. Drizzle half of the cream cheese over the top of it and take a small spatula to smooth it over the top. Add remaining cake-pumpkin mix & also the remaining cream cheese just making layers. Finally take a butter knife- stick it into the mix and go back & forth over the top of the cake to blend it a bit.
Bake for 35 minutes at 375 degrees OR until a toothpick comes out clean.

Italian Rum Cake


Ohhhhh hadn't had or made one of these in Years ...hubby saw one in a Magazine so I dug out grandmas ol' recipe book and surprised him!
For the Cake..You will Need:
1 box of yellow cake mix
and if it doesn't have pudding in the mix.. you will need 1 package of vanilla instant pudding
4 Eggs
1/2 cup of oil
1 cup of walnuts
1/2 cup of dark rum
Glaze Ingredients
1 stick of butter
1 cup of sugar (not powdered)
1/4 cup of water
1/2 cup of dark rum
What you do:
Heat your oven to 325
Grease the bundt pan
Pour 1 cup of chopped nuts in the pan.. spread evenly
Mix all your cake ingredients.. blend well and pour batter over nuts
Bake for 45 to 50 min... do the toothpick test to check the outside will get a bit darker and that is what you want
To make your glaze melt the butter in a sauce pan .. stir in the water and sugar
Boil the mix for 5 min. stirring constantly
Add the rum AFTER the mix is off the stove
When the cake has cooled.. invert it to a serving plate... prick the top .. I use a toothpick or fork
Drizzle and smooth the glaze over
allow the cake to absorb as much glaze as possible.. there will be a puddle around the bottom of the cake... cover it tightly and let sit overnight.. will absorb it up!

BACON... CHEESEBURGER DIP


Ohhhhh My BACON.. and Cheeseburger in ONE DIP.. Be CAREFUL.. it's addicting 
You will need:
1 pound of ground beef
8 to 10 strips of bacon ...crumbled 
1 small onion diced
1 tsp minced garlic
8 oz cream cheese softened
2 tablespoon worcestershire sauce
3 tablespoon ketchup
1 cup of sour cream
1/2 cup of mayonaise
1 cup of mozzarella shredded cheese
1 cup of cheddar shredded cheese
Pre heat your oven to 350 ... cook your beef, onions and garlic.. drain if necessary
In a large bowl mix cream cheese, cheese, sour cream, mayo, worcestershire sauce and ketchup... add your beef mixture and bacon... stir well
Pour into baking dish and bake for 15-20 min.
Enjoy !~

Million Dollar Cake!!


Ingredients->
1 (18 1/4 ounce) package yellow cake mix
3 eggs (or as called for by your cake mix)
1/3 cup oil (or as called for by your cake mix)
1 1/3 cups water (or as called for by your cake mix)
8 ounces cream cheese
1 1/2 cups confectioners' sugar
1 (20 ounce) can crushed pineapple in juice
2 (8 ounce) cans mandarin oranges, drained
1 (3 1/2 ounce) package vanilla instant pudding mix
1 (8 ounce) container frozen whipped topping, thawed
Directions->
1 Mix and bake cake mix as per package instruction for two 8 or 9 inch round layers.
2 Let layers cool, and then split each layer in half so as to have 4 layers.
3 In a large bowl, whip cream cheese until soft, and then gradually mix in confectioners' sugar.
4 Stir in the pineapple with juice and the drained mandarin oranges, reserving about 5 mandarin orange slices to decorate the top of cake.
5 Mix in the dry pudding mix.
6 Fold in the whipped topping.
7 Place one cake layer on a cake plate cut side up; spread with frosting.
8 Place another layer cut side down on the first one, and top with more frosting.
9 Repeat until all layers are used, spreading last bit of frosting on top and sides of cake.
10 Decorate with reserved mandarin orange slices.
11 Refrigerate overnight before serving.

Ingredients:
Equal number of Hershey kisses, mini pretzel twists and candy covered chocolates.
Directions:
Preheat the oven to 200 degrees.
Unwrap chocolates and place one in the center of each pretzel that has been placed on a cookie sheet.
Place cookie sheet into the oven for 1-2 minutes or until chocolate has softened slightly.
Remove from the oven and immediately press one candy covered chocolate onto the top of the softened chocolate kiss.
Tip: You'll be in a hurry to eat them so place them into the fridge to chill until set.

GRANNY'S CARROT CAKE

This recipe is definitely a keeper!!!!

Best carrot cake you will ever eat!!!! ...
Cake:
4 eggs
1 1/4 cups vegetable oil
2 cups white sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
2 teaspoons baking soda
2 teaspoons baking powder
1/2 teaspoon salt
2 teaspoons ground cinnamon
3 cups grated carrots
1 cup chopped pecans
Frosting:
1/2 cup butter, softened
8 ounces cream cheese, softened
4 cups confectioners' sugar
1 teaspoon vanilla extract
1 cup chopped pecans
Directions
Preheat oven to 350 degrees , Grease and flour a 9x13 inch pan.
In a large bowl, beat together eggs, oil, white sugar and 2 teaspoons vanilla. Mix in flour, baking soda, baking powder, salt and cinnamon. Stir in carrots. Fold in pecans. Pour into prepared pan.
Bake in the preheated oven for 40 to 50 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.
To Make Frosting: In a medium bowl, combine butter, cream cheese, confectioners' sugar and 1 teaspoon vanilla. Beat until the mixture is smooth and creamy. Stir in chopped pecans. Frost the cooled cake.

BLT Chicken Salad


Ingredients:
3 cups Chopped chicken (I used Rotisserie Chicken)
5 slices of bacon...
2 stalks of celery chopped
1 cup chopped fresh tomato
3/4 cup mayo
1TBS chopped fresh parsley
2 TBS chopped green onion
1tsp lemon juice
1 dash worcestershire sauce
salt & pepper to taste
Cook bacon until nice and crisp, Drain, crumble and set aside
Prepare the dressing by mixing together the mayo, parsley, green onions, lemon juice, worcestershire sauce, celery, and salt & pepper
In medium bowl stir together the chicken, tomatoes and bacon, mix in dressing until well coated. Cover and refrigerate until chilled. Serve in lettuce wrap, low carb wrap, or eat it as is! Enjoy

Bacon Cheeseburger Skillet Mac


You Will Need:
1 - 16oz pkg of Large Shell Pasta
2 lbs of ground beef
1 small onion chopped
6 fully cooked pieces of bacon chopped
2 1/2 cups of Ketchup
1 cup of chopped dill pickles
1 cup of barbecue sauce(I use Sweet Baby Rays Original)
3/4 cup of mustard
2 cups of shredded cheddar cheese
While your pasta is cooking.. In a large skillet brown your ground beef with onion....drain
Stir in bacon, ketchup, barbecue sauce, and mustard... Bring to a boil ...then simmer for 5 min.
Drain your pasta and mix it in with the meat mixture
Remove from heat and put your cheese over the mixture...cover and let stand till cheese is melted!

What a fun way to re-use something you just throw away!!
Take a toilet paper roll and cut into 3/4" strips.
With a hot glue gun, secure the sections in a flower pattern using 4 or 5 pieces. You can use the end piece of the roll left over from your cuts for the second layer. Use your imagination! The possibilities are endless!!
Secure a button in the middle, add glitter, paint, bling... whatever you like!
These also can be used for topping a gift box!
You can also use paper towel rolls too!

Low Carb Breakfast Balls (only 1 carb per serving)

They freeze really well. You can mix in TVP (texturized vegetable protein) and flax for some extra fiber."
Ingredients
2 lbs bulk pork sausage
1 lb ground beef
3 eggs
2 tablespoons dried onion flakes
1/2 teaspoon black pepper
1/2 lb sharp cheddar cheese, shredded
Directions
Mix all the ingredients together until thoroughly blended (it is best to use your hands or an electric mixer).
Form into about 4 dozen 1 to 1 1/2 inch balls and place on a cookie sheet or broiler pan.
Bake at 375°F for about 25 minutes.
Once they are cool, they can be sorted into individual zip bags and frozen for a grab-and-go breakfast.
NOTE: for Scotch Eggs, mold a bit of the raw meat mixture around a peeled hard-boiled egg (or eggs) and bake at 350°F for 30 minutes.

Weight Watchers Parmesan Chicken Cutlets

LOW CARB - LOW FAT - HIGH PROTEIN **

Yields: 4 servings...
1/4 cup parmesan cheese, grated
2 tablespoons dried Italian seasoned breadcrumbs
1/8 teaspoon paprika
1 teaspoon dried parsley
1/2 teaspoon garlic powder

Italian Wedding Soup



9-10 cup chicken broth
1 bunch of Endive or Escarole coarsely chopped
2 eggs
2-3 Tbps Parmesan cheese grated
Salt and pepper to taste
Meatballs
1/2 lb each of ground beef and pork
1/3 cp chopped fresh parsley
1 egg
1 slice bread torn into small pieces
1/2 cp grated Parmesan cheese
To make meatballs, mix altogether and shape into 1 inch meatballs. Set a side.
Take broth and heat in lg pot over med heat. Add meatballs and endive/escarole. Simmer for about 10-15 minutes. Take 2 eggs and Parmesan cheese and whisk together. Gradually add egg mixture to soup, stirring gently with fork to form thin strands of egg.
Serve in bowls with Parmesan cheese on top!

Italian Breaded Pork Chops


Ingredients
3 eggs, lightly beaten
3 tablespoons milk
1 1/2 cups Italian seasoned breadcrumbs
1/2 cup grated parmesan cheese
2 tablespoons dried parsley
2 tablespoons olive oil
4 garlic cloves, peeled and chopped
4 pork chops
Directions
Preheat oven to 325 degrees F
In a small bowl, beat together the eggs and milk.
In a separate small bowl, mix the bread crumbs, Parmesan cheese, and parsley.
Heat the olive oil in a large, oven-proof skillet over medium heat. Stir in the garlic, and cook until lightly browned.
Remove garlic and discard.
Dip each pork chop into the egg mixture, then into the bread crumb mixture, coating evenly. Place coated pork chops in the skillet, and brown abut 5 minutes on each side.
Place the skillet and pork chops in the preheated oven, and cook 25 minutes, or or until cooked through.
