CUCUMBER TIPS & TRICKS THAT YOU DON'T WANT TO MISS!!



1. Cucumbers contain most of the vitamins you need every day, just one cucumber contains Vitamin B1, Vitamin B2, Vitamin B3, Vitamin B5, Vitamin B6, Folic Acid, Vitamin C, Calcium, Iron, Magnesium, Phosphorus, Potassium and Zinc.

2.For a pick me up in the afternoon... Put down the caffeinated soda and pick up a cucumber. Cucumbers are a good source of B Vitamins and Carbohydrates that can provide that quick pick-me-up that can last for hours. Slice some and put in your water bottle.

3. If you rub a cucumber slice along your bathroom mirror, it will eliminate the fog and provide a soothing, spa-like fragrance.

4. Place a few slices of cucumber in a small pie tin and your garden will be free of pests all season long. The chemicals in the cucumber react with the aluminum to give off a scent undetectable to humans but drive garden pests crazy and make them flee the area.

5. Looking for a fast and easy way to remove cellulite before going out or to the pool? Try rubbing a slice or two of cucumbers along your problem area for a few minutes, the phytochemical in the cucumber cause the collagen in your skin to tighten, firming up the outer layer and reducing the visibility of cellulite. Works great on wrinkles too!!!

Cinnamon Muffins - Vegan/Gluten Free


2 cups flour
2 tbsp ground flaxseed
2 tsp baking powder
1 tsp baking soda
½ tsp salt
¼ tsp nutmeg
½ tsp cinnamon
½ cup cane sugar/brown sugar
½ cup unsweetened applesauce
1 cup unsweetened almond breeze (cow’s milk is fine)
1 tsp vanilla extract
Cinnamon sugar mix:
2 tbsp sugar (cane/white/brown all work)
½ tsp cinnamon
Preheat 355 F.
You can use silicone or paper liners; or grease a 12 muffin pan.
In a large bowl combine flour, flaxseed, baking powder, baking soda, salt, nutmeg, and cinnamon. In medium bowl combine sugar, applesauce, milk, vanilla. Pour wet ingredients into dry ingredients and mix until combined. Pour muffin mix into liners until they are around ¾ full. Sprinkle cinnamon sugar mix over the top of the muffins.
Bake for 20-25 minutes or until skewer removes clean.
For the GF – you can use gluten free flour mix or pancake mix.
For regular muffins – use plain flour or whole-wheat.
Note: the mix is very thick. I spooned into the liners. If using paper, I recommend spraying with non-stick spray. Next time I will add cinnamon/sugar mixture to the bottom of the liner, add mix, then sprinkle sugar mix on top too.

Spicy Mexican Quinoa Casserole


2 cups cooked quinoa (you’ll need about 1 cup / 6 oz / 170 gr of uncooked quinoa) 
1 medium onion, minced
1 clove garlic, minced
1 8 oz / 225 gr can tomato sauce
1 medium tomato, diced
2 jalapenos, seeds and ribs removed, minced
1 tablespoon olive oil
pinch of red pepper flakes
½ teaspoon cayenne pepper
1 teaspoon chili powder
1 teaspoon cumin powder
1 teaspoon fine grain sea salt
ground black pepper
2 bell peppers, chopped (I used one red and one yellow)
1 cup / 4 oz / 113 gr Mexican cheese (or sharp cheddar or vegan cheese), shredded
handful spring onions
Directions
Preheat oven to 375°F (190°C) and lightly grease a 8x8 baking dish.
In a skillet over medium heat add oil, garlic and onion. Saute’ for about 3 minutes.
Add chopped tomato, tomato sauce, red pepper flakes, jalapenos, salt and pepper. Stir and let simmer on low heat for 7 minutes.
In a dry nonstick skillet over medium high heat, toss and toast quinoa with cayenne pepper, chili powder and cumin for 2 minutes. Taste and season with salt. Set aside.
In the same skillet over medium-high heat, place the diced peppers and DO NOT stir. This allows the peppers to get the brown roasted look on the outside. Wait for 2 to 3 minutes before stirring, then let them roast for another 2 minutes before removing from the heat. Set aside.
In a large bowl combine tomato mixture, quinoa, ½ of the shredded cheese and ½ of the bell peppers.
Transfer quinoa mixture to baking dish, top with remaining bell peppers and cheese. Cover with foil and bake for 20 minutes. Remove foil and bake for another 10 minutes.
Remove from the oven and garnish with green onions.
Serve with tortilla chips, salad, sour cream or just eat it plain.

One serving of this Spicy Mexican Quinoa Casserole (which is very filling) scores 247 calories, 11.8 grams of fat, 25.8 grams of carbs and 10.4 grams of protein.

Slow Cooker Chex Mix


1 and 1/2 Stick or 12 tablespoons butter melted 
4 tablespoons Worcestershire sauce 
1 teaspoon garlic powder 
1 teaspoon onion powder 
1 teaspoon butter flavored salt
2 cups Corn Chex cereal
2 cups Rice Chex cereal
3 cups Wheat Chex cereal
1 and 1/2 cups peanuts
2 cups Cheezit Party Mix
1 and 1/2 cups Crunchy Cheetos
Directions
Melt butter and add Worcestershire sauce, garlic powder, onion powder and butter flavored salt. Mix well.
Add dry ingredients and drizzle butter mixture on each layer as you build it. There is no set way of adding because you will be mixing it all up at the end anyways. I do this to add flavor throughout the entire mixture. When you have added all ingredients pour whatever butter mixture you have left on top and mix well. Toss it gently so that you don't break up the cereal into small pieces. Gradually stir until evenly coated.
Cook uncovered on low heat setting 3 to 4 hours, stirring every 30 minutes..

Spinach Chicken Soup


All ingredients are added to a crock pot and "eyeballed" to content. Add as much or as little as you want!
Chicken (we used leftover thighs/legs from last night)
1 can spinach
a few baby carrots, coined
a couple stalks of celery, sliced
a bunch of green onions, chopped
1 onion, chopped
Garlic salt/powder to taste
1/2 bag of your favorite noodles (or rice/quinoa)
1 stick of butter
pepper
Chicken broth (or use bullion cubes, to taste)
Add everything except rice/noodles to crock pot. Cook on LOW. When hot, add noodles. Wait 20 minutes (or until noodles are as done as desired) then serve and enjoy!

CROCK POT BEER AND SALSA RIBS


Ingredients 
1 rack pork ribs
1 jar medium salsa
1 (12 oz) bottle of beer - I used a dark ale but use whatever you have on hand
1 envelope Onion Gravy
1 medium onion sliced
Directions
Cut the pork rack into smaller pieces, put in the crock pot and throw in all the other ingredients, give it a good stir and cook on LOW for 8 hours.
Again, it's SO good, it literally falls off the bone and you get left with this amazing rich brown gravy too. What are you waiting for?

SWEET HAWAIIAN CROCK-POT CHICKEN


EASY AND YUMMY!!
2 lb Chicken tenderloin chunks
1 cup pineapple juice
1/2 cup brown sugar
1/3 cup soy sauce
Combine all together, cook on low in Crock-pot 6-8 hours...that's it! Done!
Serve with brown rice and you have a complete, easy meal!!

Pasta Garlic Shrimp

If you love shrimp you're going to love this one And dont be skimpy on the shrimp 

Pasta Garlic Shrimp

serves 2 double for more ppl 
1/4 cup butter or more if not enough LOL 
3-5 Garlic cloves minced depends on how much you LOVE garlic, and size
I used smart choice linguini noodles enough for 2 people
one package of raw JUMBO shrimp 20 count or more
parsley
fresh grated parmigiano cheese

Boil water in pot for noodles and cook till al dente, drain
In a frying pan add butter and garlic, cook on low for about 3 min add shrimp, continue to cook on med low heat flipping shrimp at about 3-4 min, sprinkle with parsley pepper and salt if desired. Once shrimp is cooked add noodles to pan and cook for a few more min. Place of serving platter or plate and sprinkle with parmigiano cheese.

Crock Pot Chicken Tacos



Weight Watchers Points 4
Ingredients
1-1/2 lbs boneless, skinless chicken breasts
3 tbsp lime juice
1 tbsp chili powder
1 cup frozen corn
1 cup chunky style salsa
12 (6 inch) Fat-Free-Flour tortillas, warmed
Sour cream, shredded cheddar, cheese lettuce (optional)
Directions
1. Place the chicken in a 3 quart slow cooker. Combine lime juice and chili powder; pour over chicken. Cover and cook on LOW 5 to 6 hours or until chicken is tender.
2. Remove chicken; cool slightly. Shred meat with two forks and return to the slow cooker;
heat through. Stir in corn and salsa.
3. Cover and cook on LOW another 30 minutes or until heated through. Serve in warm tortillas with sour cream, cheese and lettuce if desired.
Yield: 12 Tacos

Sausage & Tortellini Soup



2 - 14.5 cans diced tomatoes basil, garlic & oregano
3 cups water
1 - 10.5 can Campbell's French Onion 
2 cups of frozen cut green beans
1 lb fully cooked turkey sausage
2 cups shredded coleslaw
9 oz of Barilla three cheese tortellini
Place diced tomatoes, water, soup and beans in the crock pot. Cook on low 8-9 hours or on high 4-5 hours.
Before serving cook the tortellini according to the directions on the package. While the tortellini is cooking add the coleslaw to the crock pot. When the tortellini's are done drain and add to crock pot and serve.

BBQ Turkey Stuffed Sweet Potato


4 sweet potatoes
1 1 lb turkey breast medallion
1/2 c chicken broth
1/4 -1/2 cup BBQ sauce of choice
1 onion chopped
4 mushrooms chopped
Oil
S&P to taste
1. In crock pot add chicken stock, turkey and top the turkey with BBQ sauce. Cook for 6-8 hours on low or 4 hours on high.
2. Poke holes in Sweet potatoes. Bake at 400 degrees for 40 minutes or until soft.
3. Caramelize onions and mushrooms in 1 TBS oil. Season with Salt and pepper
4. When potatoes are done and cool enough to handle cut the sweet potato in half length wise. Scoop out the sweet potatoes leaving enough flesh so the skin will keep its shape.
5. Turn over potato so cut side is down brush skin with oil and season with salt and pepper. Bake 10-13 minutes until starting to brown.
6. Mash the sweet potato flesh.
7. Add 1 -2 TBS of mashed sweet potato to the skin, add mushroom and onion, turkey.
8. Top with shredded cheese (optional) and put back in oven until cheese is melted.

Apple Cinnamon Crockpot Oatmeal


2 apples, sliced
1/3 cup brown sugar
1 tsp cinnamon
2 cups oatmeal
2 1/2 cups milk 
1 1/2 cups water
Spray crockpot with cooking spray (this is so its easy to clean after) Place oats in crock pot, then add remaining of your ingredients leaving the liquids till last. DON'T STIR
Turn crockpot on low and go to bed. Cook for 8-9 hrs Its ready when you get up ENJOY

Smoked Chipotle Pork Riblets



Smoked Chipotle BBQ Sauce
2 1/2 cups ketchup
1/2 cup chopped onion
1/2 cup water
2 cans chipotle chilies (smoked jalapenos), chopped
1/4 cup brown sugar
2 tablespoons oil
Heat in a sauce pan until well blended and sauce thickens.
Yields 4 1/2 cups
Brown riblets in oil on both sides.
Place in crock pot and put bacon slices on top of riblets.
Cook on low for 5-6 hours.
Pour smoked chipotle sauce on top of riblets and continue cooking
or 30 more minutes.

Homemade Beef Stroganoff



1 tablespoon vegetable oil 
1 boneless beef sirloin steak or beef top round steak, 3/4-inch thick (about 1 pound), cut into thin strips 
1 medium onion, chopped (about 1/2 cup) 
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Mushroom Soup (Regular, 98% Fat Free or Healthy Request®)
3/4 cup milk
1/2 teaspoon paprika
1/4 teaspoon ground black pepper
1/3 cup sour cream or plain yogurt
4 cups whole wheat or regular egg noodles, cooked and drained
Chopped fresh parsley
1 Heat the oil in a 12-inch nonstick skillet over medium-high heat. Add the beef and cook until well browned, stirring often. Remove the beef from the skillet. Pour off any fat.
2 Reduce the heat to medium. Add the onion to the skillet and cook until it's tender.
3 Stir the soup, milk, paprika and black pepper in the skillet and heat to a boil. Stir in the sour cream. Return the beef to the skillet and cook until the beef is cooked through. Serve the beef mixture over the noodles. Sprinkle with the parsley.

Here's what I did:
1 tablespoon vegetable oil
1 boneless beef sirloin steak(Cubed)
1 can (10 3/4 ounces) Campbell's® Condensed Cream of Chicken Soup
1/4 teaspoon ground black pepper
1/3 cup sour cream
1 brick of Cream Cheese
A couple of cloves of garlic
4 cups whole wheat or regular egg noodles, cooked and drained
Cook all ingred in crock pot on low (I did 11 hours)
Mix egg noodles in.
Enjoy!!!

Crock Pot Chicken Tortilla Soup



Ingredients:
4 Small Chicken Breast
15-oz can Black Beans, undrained
2 15-oz cans Mexican Style Stewed Tomatoes (I used Fire Roasted)
1 C Salsa
14 1/2-oz can Tomato Sauce
4-oz can Green Chillies (optional)
Tortilla Chips
Shredded Cheese
Combine everything but tortilla chips and cheese in Crock Pot, use at least a 5 quart one,
Cook on Low 6-8 hours. About an hour before serving, remove chicken and shred it, then put it back in the Crock Pot.
Once finished, put chips in the bottom of a bowl, add soup, and top with cheese!

FROZEN FRUIT WATER

My kids love to drink water but this gives it a whole new twist!!
Freeze their favorite kinds of fruit and use it like ice cubes! Then when the "ice" melts they get to eat the fruit!

What you do is slice their favorite fruits up thinly and lay out on a tray lined with foil or wax paper! Toss it in the freezer for an hour or two! When the fruit is hard place it in a bag or container so you can take out what you want and nothing else!

Works great with
Strawberries
blueberries
water melon
grapes
Lemons wedges
oranges (we section these, they do take a little longer to freeze, but they taste so good)

Crock Pot Southwestern Chicken Chili


1 small onion, chopped
1 16-oz can black beans
1 16-oz can kidney beans
1 8-oz can tomato sauce
10 oz package frozen corn kernels
2 14.5-oz cans diced tomatoes w/chilies
1 packet taco seasoning
1 tbsp chili powder
2 lbs boneless skinless chicken breasts or tenderloins
bell peppers or chili peppers, chopped
shredded low fat cheese (optional)
Combine everything but chicken in crock pot. Place chicken on top and cover. Cook on low for 10 hours or on high for 6 hours. Half hour before your're ready to serve remove the chicken and shred it then return to the crock pot
Makes 10 servings ( about 1 3/4 cups each) approx 204 calories 5 WWP+ and 1.4 g of fat (nutritional value is factored without cheese)

Mississippi Crock-Pot-Roast!



OMG!!! MAKE SURE YOU SAVE THIS ONE!!!! Best pot roast I've EVER HAD!!! 
Here is how you do it.... 
1 3-5lb beef roast
1 pkg dry Hidden Valley Ranch dressing mix
1 pkg Au Jus mix
1 stick of butter
5 pepperoncini peppers
Put the roast in crock pot.
Sprinkle with Hidden Valley ranch dressing,
add the Au Jus mix, stick of butter,
and the 5 pepperoncini peppers.
Cook on low for 7-8 hours.
DO NOT ADD WATER
