Potato Rosette Cups

WOW, how easy is this??

Potato Rosette Cups
What a great way to serve potatoes AND keep your portions under control!!

Here’s what you do….
Cook your potatoes. (Boil them with the skins on, and the skin just comes off using your hands)

Preheat your oven to 375 degrees.
Mash the potatoes using a little milk. You can add your favorite ingredients to them…this one has cheese and chives in it…but any thing works well.

Use a paper towel with oil to grease your muffin tins, or use a no-stick spray.

Fill the tins with the mashed potato mixture – just a bit overfull. Run a fork in a circular pattern over the top.

Bake about 15-20 minutes, or until the tops are crispy and golden brown to your liking.

Let sit about 5 minutes before taking out of the tin.

The really cool thing is not only are they pretty, but you can have your crunchy bit and the soft mashed all in one. We do need some carbs in our diet, and with different sized muffin tins, you can easily control the portion size!
Use a mini tin for snack or appetizer size
