Cinnamon Cream Cheese Roll-ups





1 loaf bread
1 8 oz pkg light cream cheese, softened at room temperature
1 egg yolk
3/4 cup sugar, divided
1 Tablespoon grounded cinnamon
1/8 cup melted unsalted butter

In a bowl, cream until smooth - cream cheese, egg yolk and 1/4 cup of the sugar. Now, cut the crusts of all the slices of bread (cut crusts into chunks and freeze for later use ie. stuffing). The end pieces will not work for this recipe so might as well cut them up for stuffing cubes as well.


Take a rolling pin and flatten the slices. Spread each slice fairly thickly with the cream cheese filling. Roll each slice up and place seam side down on a baking sheet. 


Preheat oven to 400 F degrees. Melt the butter in a small bowl and using a pastry brush, brush each roll with the butter. Mix the remaining amount of sugar and the cinnamon in a shallow container. Roll the rolls around in it to coat all sides. Place back on the sheet - seam side down. 


Bake for 10 minutes or until golden brown. ~ Enjoy!!
