Mango Banana Bread:



2 cups wheat flour
2 tsp baking soda
1 tsp baking powder
2 tsp cinnamon
1/2 tsp salt
1/2 cup dark brown sugar
1/2 cup organic sugar (sorry, I don't get the refined sugar)
1/4 cup canola oil
1/4 cup unsweetened apple sauce
1/4 cup melted butter
1/4 cup chopped walnuts
1 tsp vanilla
2 cups ripe mango chopped coarsely (I used the fiberless mangos)
1 1/2 overripe bananas (they were large)
Egg beaters the equivalent of 3 eggs
1/2 cup golden raisins
1/2 cup shredded coconut is optional but I didn't use any.

Combine the dry ingredients in a large bowl. Make a well in the center and add the other ingredients. Mix thoroughly. Pour into greased loaf pan and bake at 350 for 45 minutes to an hour, or until the toothpick comes out clean.

However, I used a bundt pan (my loaf pan was too small) and adjusted the time as needed, but didn't need much more.
