Homestyle Potato Soup



1/4 cup diced white onion
4 cups (diced in 1" cubes) potatoes
1/2 to 2/3 cup of flour (I used Almond flour)
4 cups of milk (2% recommended)
1 cup heavy cream
2 Tbsp unsalted butter
Small amount of sea or kosher salt
freshly ground black pepper, to taste
* Any extra spices or small ingredients of your liking (Such as bacon bits, celery, paprika, rosemary, etc.)

Peel the potatoes, wash them well, dice them into cubes, and place in large stock pot. Cover with water and add a couple dashes of salt. Bring to boil, turn down to medium heat, then cook for about 15 to 20 minutes until soft.

Drain. In a frying pan, saute onions in butter until clear (not brown). Add into potatoes and partially mash (you still want a few chunks). Add the flour and mix thoroughly. Now add milk and cream and stir well. Continue to cook over medium heat until heated through and slightly thickened -- approximately 5 to 10 minutes. Stir frequently so as not to burn. Add salt and pepper to taste.

Serve with your choice of garnishes. ~ Enjoy!!
