Tayna's Broccoli Salad



Oh my gosh this was GOOD!!

Ingredients 
10 cups of bite size broccoli 
1/2 lb Cooked crisp and chopped bacon (Reserve 1 Tablespoon of the drippings)
1/2 medium red onion sliced thin (cut down the center not end to end before slicing)
8 ice cubes
1 cup buttermilk
2/3 cup reduced fat sour cream
1/2 Tablespoon grated lemon zest
2 Tablespoons lemon juice
2/3 cup golden raisins
4 Tablespoons salted and roasted sunflower seeds
Kosher salt and Pepper to taste

Directions
Cook the bacon til crispy and crumble. Save 1 Tablespoon of the drippings for the dressing. Reserve the rest of the dressings for greens etc later.

Combine the ice cubes and 1/2 cup water in a bowl and put the thinly sliced onions in this mixture for about 10 minutes.

Put bite size broccoli in a big bowl and after the onions have set for 10 minutes add them to the mix. Add in the raisins, bacon and sunflower seeds and stir to combine.

In a medium bowl combine the buttermilk, sour cream, lemon juice, lemon zest, salt and pepper and 1 Tablespoon of the bacon grease and wisk til combined. Pour over the broccoli mixture to thoroughly combine.

Enjoy! It was awesome!! I wish I had added halved cherry or grape tomatoes I think that would have been awesome!!
