Low fat enchiladas



Ingredients:

* Chicken
* Black beans
* Cilantro chopped
* Fat free sour cream
* Diced green chilies
* Avocado
* Reduced fat cheese
* Red or green enchilada sauce
* Corn tortillas, or you could use low carb tortillas

Directions:

Mix the chicken, black beans, sour cream, cilantro, & green chilies, in a mixing bowl. I did not do any measurements, just add to your liking. Put a little bit of enchilada sauce in the bottom of a 9x13 dish. Fry the tortillas in oil, and dip in enchilada sauce. Add your chicken mixture and some cheese. Roll up and repeat. When all done, top with leftover sauce, and some more cheese. Bake at 350 for 20 to 30 minutes. Top with avocado and sour cream. Enjoy!
