Herb Breakfast Frittata (diabetic friendly)


4 eggs
1/2 small onion, sliced thin (I used a white onion)
Large Potato, slice thin 
Italian Seasoning (to taste)
Salt & Pepper (to taste)
Shredded Cheese (I used Fiesta Mix)
1 1/2 Tbsp. Olive Oil

In an oven safe pan, sauté your onions in the oil until tender. I did mine until they were browned, cause that's how I love eating them! Remove from pan and then layer the pan with your potatoes. While they cook on a low heat, scramble eggs with a little milk, Italian seasoning, salt, and pepper. Add the onions in the egg mixture and pour over layer of potatoes in the pan. Cover and cook approximately 5 minutes. Should be almost cooked but not quite.

Cover with shredded cheese of preference and broil for about 3 minutes. Let sit for a few minutes and cut into pieces. This will make 4 servings in an 8" pan. I used my Stainless Steel pan and it wasn't an issue with the broiler.

Want to add a little heat to it? Try adding Crushed red peppers to the seasoning or even some Mild Salsa on top! Nom NOM! This was delish!

Fruit Salad
1 Small Red Apple (sorry can't remember what kind it was)
1 Small Granny Smith Apple
1/4 C Craisins/Cranberries
1 Small Banana
3 Tbsp. Chopped Pecans/Almond (nut of choice)

I just cut them into small pieces and mixed! Easy and good!
