Lemon Bars

Yields: 1- 9" x 13" pan

2 cans sweetened condensed milk
3 Tablespoons lemon zest
1/2 cup fresh squeezed lemon juice
2 cups rolled oats
1-3/4 cups almond flour
1 cup brown sugar
1-1/4 cups unsalted butter
1/2 teaspoon baking soda
1/2 teaspoon sea salt

Preheat oven to 375 degrees F and grease pan.

In a medium bowl, thoroughly mix together milk, zest and juice. Set aside.

In a second medium-sized bowl, mix remaining ingredients, cutting in the butter until it is crumbly. Gently press half of this mixture into the pan and bake for 10 minutes.

Spread the lemon mixture over the baked base and sprinkle remaining crumb mixture over top of this. Again, gently press the crumbs down into the milk (can either use a fork or your hand).

Bake for about 20 minutes more, or until golden brown and the center is set but still soft.

Cool completely and cut into bars. *Store in refrigerator in an air tight container.
