Ingredients
8 oz cream cheese
1/2 cup shredded cheese
1 pound (2 chicken breasts) shredded chicken
1 tablespoon taco seasoning
1 teaspoon salsa
4- 10" flour tortillas
cooking spray or butter
Directions-
Cook chicken and shred. Mix cream cheese, shredded cheese, taco seasoning, and salsa. Fold in cooked chicken. Place 1/4 of chicken mixture in center of each tortilla and roll. Place seam side down. Cover tortilla with either cooking spray or butter. Bake 15 mins on each side of chimi at 400*F.
Notes- I would use more chicken, these were very cheesy. I used sharp cheddar but they would be very good with pepperjack cheese. I served with sour cream. When reheating, place back in oven for 5 minutes or under broiler. May be good using cream cheese with chives.
