INGREDIENTS:
12 oz bag white chocolate chips
1/3 cup crunchy peanut butter...
1/3 cup toasted coconut flakes, divided
3 cups rice krispies
1 1/2 cups mini marshmallows
1/3 cup chocolate chips
DIRECTIONS:
Line a square glass baking dish with foil and grease with spray or butter, set aside. Place white chocolate chips in microwave safe bowl and heat in 30 second increments, stirring between each heating. Once melted, add in peanut butter and mix well. Stir in the rice krispies cereal and most of the coconut. Set aside and allow to cool for about 10 minutes. Gently add in marshmallows and chocolate chips. Pour into the prepared pan and top with the coconut. Gently press to an even thickness with a buttered spoon or your hand. Place in the refrigerator until hardened and cut into squares, approx. 10 – 15 minutes. Store at room temperature in a closed container or refrigerate for up to one week (but they won’t last that long!)
