Vicky's Apple Oat Cookies (Photo by Georgia S.)


1-3/4 cups all purpose flour
1 tsp baking soda
1-1/2 tsp cinnamon
1/2 tsp salt
2 cups quick oats
1 cup shredded apple
2 eggs
1 tsp liquid vanilla
1/2 cup brown sugar
1 cup granulated sugar
3/4 cup butter
Pre heat the oven at 375
In a large bowl mix the brown sugar, granulated sugar and butter until nice and creamy. Add the eggs and vanilla, mix well. Stir in the flour. Set aside
In a medium bowl mix the baking soda, salt, cinnamon and oats. Stir until well blended.
Add the shredded apples to the oat mixture and stir it in the sugar/butter mixture.
It will be sticky, that's ok. Spoon on a baking sheet (I used a spoon and my hand) and bake for 10-12 minutes. Depending on your stove, 10 minutes will make a softer cookie and 12 minutes a harder cookie. Keep an eye on them. When they are done, they will no longer be sticky
Enjoy them before they are gone.......the disappear really fast!
