TACO CASSEROLE


Serve over shredded lettuce and with a dollop of sour cream.
If you like try adding some sliced jalapeño for spice!
Ingredients:
1 lb ground beef
salt and pepper to taste
1/2 cup chopped onion
1/2 cup chopped bell peppers (red, yellow and green)
1/2 cup picante sauce
1 can tomato sauce
1 1/2 cup water
15 grape tomatoes cut in half
grated cheese (as much as you prefer)
1 bag tri-color tortilla strips or chips
shredded lettuce and sour cream (optional)
Instructions:
Brown meat with onion, bell peppers, salt and pepper. Add picante sauce, tomato sauce, and water. Bring to a boil. Reduce heat and simmer for 15-20 minutes. Add Tortilla chips/strips (save some back for topping later). Pour into baking dish. Arrange tomatoes around top of dish. Top with cheese and tortilla strips.
Bake for 10 minutes at 400 degrees. Add rest of the tortilla strips and some more cheddar cheese on top and bake for 5 more minutes or until cheese melts.
