1 Tbsp. olive oil
1 6-ounce boneless, skinless chicken breasts, diced
kosher salt and black pepper
1 lb. button mushrooms
1/4 c. onion, sliced
1 Tbsp. minced garlic
1/2 c. apple juice
4 c. coleslaw mix
Cook diced chicken breast in oil over medium heat 3 minutes. Keep chicken stirred to cook on all sides. Chicken will not be cooked completely through.
Add mushrooms, garlic and onion to chicken. Saute until onions begin to turn transparent. Add apple juice and place lid on skillet. Turn heat to medium low and simmer for 5-7 minutes.
Put coleslaw mix and seasoning in skillet and stir well. Keep lid off and allow to cook until juice evaporates.
