Feta & Spinach Stuffed Pork Sirloin with Garlic Dijon Sauce



Ingredients:
Cooking spray
Minced Garlic
Black pepper
1 10-ounce package frozen spinach, thawed, drained and squeeze dried
1/4 Cup (1 ounce) Crumbled Feta Cheese
3 Tbsp Cream Cheese
4 boneless center cut Pork Sirloin Chops
2 Tbsp. Fresh Lemon Juice
2 Tbsp. Dijon Mustard
1/4-1/2 tsp dried Oregano
Preheat broiler.
Heat skillet over medium. Coat with cooking spray. Saute at least 2 cloves of garlic for 1 minute. Add spinach & saute until moisture evaporates. Remove from het. Stir in Feta and Cream Cheeses.
Cut a horizontal slit in the sirloin chops, forming a pocket. Stuff about 1/4 cup of the spinach mixture in to each chop. Place on broiler pan.
Mix together mustard, lemon juice, oregano and minced garlic. Brush over top of each chop. Broil the chops for 6 minutes. Turn, brush chops with remaining sauce. Return to broiler for 2 more minute or until cooked through.
