Puffed Cheesy Eggs (Recipe & photo by Kathleen Thomas)



-Separate 2 eggs ( yolks, egg whites)
-mix egg whites with a mixer until stiff peaks form.
-Grate cheese of your choice and fold into the puffed egg whites.
- On a tray lined with parchment paper scoop two piles of egg white .
- Make a hollow in the middle of each one to put the egg yolks in .
- Bake in a preheated oven until the yolks are cooked to your preference .
-Top with butter, salt, pepper and chives.
* You can also fold in chopped up ham after the egg whites are whipped *
