Sweet Potato Soup


The flavors of Sage, Fig, and Bacon make this soup the STAR of the dinner table. Serve alongside fresh baked crusty bread OR inside a beautiful Bread bowl as a nice beginner to the perfect meal. 

Ingredients:
1 Lg Sweet Potato, peeled & rough chopped
½ Lg Onion, peeled & chopped
1 ½ C Vegetable or (Chicken) Broth
1 C Coconut Cream (or Milk)
½ Tsp Cayenne pepper
1 Tsp Turmeric
½ Tsp Coriander
2 Tblsp Agave
½ Tsp Salt & Pepper, to taste
2 Tblsp Olive Oil
½ Tsp Sesame Oil (not required)
Roasted Edamame, Pumpkin Seed, Sliced Fig, Bacon (cooked & chopped) and Sage leaves

Directions:
Heat oil in a pan over Medium High heat
Sauté Onion 3-4 min, just until tender
Add Sweet Potato, all Spices then stir and cook for about 12-15 min, until tender
Add Mixture to your Blender then,
Add Coconut Cream (or Milk), and Vegetable (or Chicken) Broth
Add Agave
Blend until Creamy and desired consistency reached
Garnish and Serve Immediately

NOTE:
-You can use dried Sage, or fry in a pan with a little butter to crisp. (I like it fresh)
For a creamier texture, add more cream/milk; for a looser texture, add more broth

For Vitamix Users:
-Select Variable 1, turn on machine
-Slowly increase to Variable 10 then switch to High
-Blend for about 5-7 min or until steam rises.
