2 medium zucchini, sliced
1 bell pepper, diced
1 small onion, sliced thin
2 tsp. minced garlic
1 c. salsa
6 strips of bacon
Cut bacon in small pieces and fry in large skillet. Cook about half way because they will continue to cook with the rest of the dish later.
Drain bacon fat, leaving about 1 Tbsp in pan. Add prepared veggies, garlic and salsa. Cook on medium with lid on low until veggies are soft and to your liking.
