Shrimp Scampi

2 lbs.Medium raw shrimp shells removed ( leave tail attached)
1-2 Tbs fresh chopped parsley
1 heaping tsp chopped garlic
1 Tbs Lemon Juice
2 Tbs Dijon mustard
1 cup of butter
1 tsp red pepper flakes (optional)
Preheat oven to 425 °
In a saucepan melt butter and add Dijon mustard, lemon juice, garlic and 1 Tbs parsley(reserve 1 Tbs to sprinkle on before serving) and red pepper flakes(optional if you like spicy )
Remove from heat when well mixed and butter is melted.
Place shrimp in baking dish and pour butter mix over the raw shrimp
Bake for 15 minutes or until shrimp are opaque in color.
add remaining parsley
Serve over pasta, rice, or Zucchini "Noodles" like I did!!
